Fished off the coast of Saint-Gilles-Croix-de-Vie in Vendée, the vintage sardines are selected for their rich fat content of over 12%. A tradition maintained since 2004 where the sardines are prepared and nested by hand within hours of fishing. This recipe is above all a sardine for keeping that must be allowed to age by turning it every six months to allow it to confine and enhance its gourmet notes.
