Fished off Saint-Gilles-Croix-de-Vie in Vendée, vintage sardines are selected for their high fat content of over 12%. A tradition maintained since 2004 where the sardines are prepared and nested by hand in the hours following fishing. This recipe is above all a sardine for laying down which must be left to age, turning it every six months to allow it to confit and enhance its gourmet notes. Mademoiselle Lulu continues her epicurean peregrinations and waltzes to the rhythm of flamenco from Seville. For the occasion, she is adorned with a sumptuous cardinal red dress whose drape recalls the movements of the ocean and which reveals her back covered with elegant bluish fish. Equipped with her fan whose details are similar to fine scales, Mlle Lulu enjoys the warmth and friendliness of Spanish evenings.
