Vintage Sardines 2023 COSSAIS “The happy news from Melle Perle”

Fished off the coast of Saint-Gilles-Croix-de-Vie in Vendée, vintage sardines are selected for their rich fat content greater than 12%. 

A tradition maintained since 2004 where the sardines are prepared and packed by hand in the hours following fishing. 

This recipe is above all a sardine that must be left to age, turning it every six months to allow it to preserve and enhance its delicious notes. Melle Perle shines surrounded by her favorite flowers for the Chiang Mai flower festival.   A final escapade with its rounded belly which hides the greatest happiness.   Delphine Cossais offers her muse a second motherhood and illustrates her blossoming in the middle of a work that highlights this fabulous stage of life while enhancing our delicious 2023 vintage.
