Caught off the coast of St Gilles Croix de Vie in Vendée, vintage sardines are selected for their high fat content of over 12%. A tradition maintained since 2004 where the sardines are prepared and canned by hand within hours of fishing. This recipe is above all a sardine for keeping that must be left to age, turning it every six months to allow it to preserve and enhance its gourmet notes. Miss Perle tenderly rocks her son Ulysses in an embrace full of gentleness and maternal love. A creation by Delphine Cossais to enhance our 20th vintage, the 2024 vintage. A refined setting where the sardines are delicately soaked in extra virgin oil.
