Arctic char in olive oil and Pyrenean fir

Preserved small fresh Arctic char, lightly salted in brine, prepared and canned by hand, coated with vinegar and Pyrenean fir pepper and covered with extra virgin olive oil. Fish, vinegar, pepper and oil are all labeled AB. Manufacturing: The small Arctic char are raised at an altitude of 1150m at the fish farm in La Fajolle (11). They are canned in our laboratory in Esperaza (11).
