SAS Truitelle produces and markets the first canned small fish labeled AB. ÉMade from ingredients of exceptional quality and handcrafted in our workshop in Esperaza (11), our gourmet preserves offer, as an aperitif or snack, a unique taste journey between finesse of flesh, balance of flavors and a astonishing length in the mouth. 


A PRODUCT GOOD FOR YOUR HEALTH
The rainbow trout which are used in the composition of La Truitelle preserves are produced in an artisanal manner, on small breeding structures that have been AB certified for more than ten years, and canned manually in a traditional French cannery.   Combined with organic extra virgin olive oil, they constitute an important source of proteins and unsaturated fatty acids (Omega 3, 6 and 9).   Unlike wild fish, which often contain significant amounts of heavy metals and microplastics, La Truitelle canned fish can be eaten several times a week. 


A PRODUCT GOOD FOR THE PLANET
La Truitelle preserves are triple ecological:
• They are the first canned small fish labeled organic farming.
•They constitute an alternative to the overfishing of pelagic species (sardines, mackerel, anchovies), whose stocks and sizes are constantly decreasing.
•The small fish canned by La Truitelle consumed, for one kilo of processed fish, three to four times less fish meal than the large pieces generally used in canning and smoking.
 
TROUTELLE IS:
– an alternative to overfishing of sardines, mackerel, tuna and sprats,
– an alternative to overfishing of “forage” fish and krill,
– 98.9% AB labeled ingredients and 1.1% unrefined, untreated salt.

Holder of prefectural Social Utility Enterprise (ESUS) approval, SAS La Truitelle employs people who are far from the world of work or have disabilities to produce its products.   It also participates in the revitalization of the Upper Aude Valley, a territory hard hit by deindustrialization.
