We are two young fish farmers based in the Somme, at the head of the Les Sources de Métigny fish farm, which has specialized in breeding Arctic char for over 30 years.
Native to alpine lakes, this rare and delicate fish requires pure, cold water to thrive. Thanks to the exceptional quality of our source, we have ideal physicochemical conditions for its breeding.
We are one of the few fish farms in France capable of controlling the entire life cycle of the Arctic Char, from the egg stage to slaughter. It takes nearly 30 months to raise an Arctic Char at the Sources de Métigny — a long time but essential to obtain fine and tasty flesh.
For three decades, this demand for quality has earned us the trust of the greatest French restaurants, including several Michelin-starred restaurants. Our Arctic Char has also been selected by several Meilleurs Ouvriers de France (Best Craftsmen of France), both in the kitchen and in the fish market, a recognition which testifies to the excellence of our work and our product.
