The JC DAVID Establishments salt and smoke herring, haddock, salmon, etc. in the old-fashioned way in century-old wood-burning smokehouses, listed as part of the city's heritage, thus respecting the Boulonnaise tradition.
 Since its creation and thanks to the know-how of Madame Marcelle David, the JC DAVID house has perpetuated traditions and jealously guards its secret for smoking fish, while adapting to current health and environmental standards.  
The high quality of JC DAVID products is today recognized by the greatest French chefs.
 
Based in Boulogne-sur-Mer, France's leading fishing port and cradle of maritime salting, this Living Heritage Company, recognized for the excellence of its French know-how, always puts “quality first”.
 
The JC DAVID Establishments are the last smokers in Europe to have 40 traditional wood-fired ovens. 

These large majestic chimneys (called Coresses) and their famous red wooden doors allow us to perpetuate an ancestral know-how: slow vertical smoking. 

The fish, once salted, are suspended above the hearth fueled with oak wood. 

They stay there for long hours, allowing the plumes of smoke to delicately lick each fillet. 

The flesh is tense, elongated. 

The result is a fish of inimitable flavor and quality.
