Located in Yvelines, in the heart of the village of THOIRY, our artisanal cannery offers rillettes, terrines and fish soups made from trout, smoked trout and smoked salmon.
For our supplies, we benefit from the best of the Pisciculture de Villette, also located in Yvelines, 10 minutes from the cannery. Founded in 1896, it has always demonstrated excellent know-how. The fish farm provides us with the best of its specialties: smoked salmon (cold smoking since 1977), wood-smoked trout (hot smoking since 1947), and even fresh trout.
Our exclusive recipes are made only with noble and tasty ingredients. We have just been rewarded at the Concours Général Agricole 2025, our smoked trout rillette having won a medal.
We use absolutely no preservatives or artificial flavors, favoring locally sourced ingredients.
Our rillettes are ideal for spreading on a fresh baguette or toasted country bread. Terrines are served chilled or at room temperature, cut into cubes or slices with a salad.
