The Eaux de l’Inval fish farm (SARL Lalba) is located in Borrèze, in Dordogne. The Inval, from which it takes its name but above all its pure water, is a small first category stream which irrigates the valley and has its source 1.5 km upstream.  
Its green setting and the proximity of the source of the stream make it a privileged place which gives the Eaux de l’Inval all their purity and freshness.  
Trout have been raised there for more than 30 years and it was in the 90s that Serge Lalba developed fresh and smoked fillets and then trout eggs.  
In 2012, Edouard Roullet took over the fish farm and developed canned goods (Rillettes, terrines and smoked trout soup).   In 2019, he was joined by Emeline Bayet and the range expanded to include cooked dishes (Lasagne or Blanquette and even a trout cassoulet).  
Medals at the Agricultural Show will successively reward trout eggs, smoked trout and smoked trout rillettes.
