Pirate Cannery is an artisanal fish cannery in the Landes. Lucie, 34, started this activity on her own in April 2022. She picks up her fish at the Ciboure auction in the Basque Country and transforms everything in an old duck farm that she took over a few kilometers away in the Landes. She also gets her supplies directly from small fishermen from Saint Jean de Luz on mackerel and sardines, but also works with tuna, trout from the Pyrenees, which comes from Saint Etienne de Baigori and pout, less known to the general public in order to promote local and sustainable fishing. Working alone, it is a small production, so not all recipes are available all year round but rotate according to the seasonality of the fish. Soon, the octopus, an invasive species following the warming of the waters, will also be boxed. Only trout is available all year round. The essence of Pirate cannery is to rejuvenate canning with modern and tasty recipes while promoting local fishing.
