The grapes come from varied terroirs of the Burgundy vineyards, from the chalky bedrock of the surroundings of Joigny to the granites of southern Burgundy, including the limestone of the coasts. Burgundy sparkling wine entered history in 1830 under the pen of Musset who celebrated it in the “Secret thoughts of Raphaël”. Aromas of small fruits, cherries, blackcurrant or raspberries. Powerful on the palate, long and persistent. Time brings it charm and warmth with aromas of dried fruits sometimes honeyed, spices and nutmeg. Food & wine pairings: as an aperitif, with white fish or to accompany a dessert.
