The Taggiasca olive is a typical product of western Liguria and in particular of the province of Imperia. Planted in Taggia by the monks of San Colombano, coming from the island of Lerino, in French Provence. Since January 1997, the protected designation of origin has been established for this crop. The Taggiasca olive tree reaches considerable dimensions, has well-open branches, a very twisted and often inclined trunk. Productivity is high and constant. The tasty fruit with a delicate flavour, elongated shape and purplish-black colour, ripens late in the month of January. The harvest takes place with the traditional beating method, which consists in beating the branches with a stick, so that the fruits fall onto cloths spread at the base of the plants. The extra virgin oil obtained from it has a fruity aroma and flavor, with a decidedly sweet sensation. The excellent organoleptic qualities make it a product of great value, also known for the low acidity rate, which usually does not exceed 0.4%. Taggiasca olives, being rich in monounsaturated fatty acids, help lower bad cholesterol, raising the good one.
