Sliced beef steak of 400g in total. Chef's advice: In a hot pan, brown thinly sliced with a drizzle of oil, a chopped shallot, dates, raisins, marjoram, a pinch of salt and pepper. Once the pan is dry, deglaze with white wine, then add a ladle of veal stock. Simmer over low heat 5 minutes about. Serve with the garnish of your choice.
