The secret of this vegetable cream lies in the preparation of the tomatoes: they are harvested when ripe, which gives them their very fruity taste, then semi-candied and caramelized with a generous drizzle of olive oil and spices typical of the Mediterranean and the Adriatic. This is where this subtly smoky and definitely delicious and sunny taste comes from!
