A high-altitude coffee grown with passion... This Arabica coffee is grown at an altitude of almost 2000m in the province of Loja, which has the best climatic conditions for growing and drying coffee. Particular care is taken at each stage to obtain a grain of character. The picking is manual, the cherries are carefully sorted and then pulped to recover the coffee beans which will then be washed and distributed on terraces to dry for several weeks in the sun in order to reach 12% humidity. After these delicate stages, the coffee is stored for a month: this is how its best aromas will unfold during roasting.
