The company Ravioles Mère Maury has a know-how of excellence, recognized by the State label, "Entreprise du Patrimoine Vivant - EPV", issued by the National Institute of Crafts. Our Ravioles du Dauphiné hold a Protected Geographical Indication as well as the Label Rouge with an incomparable finesse of the dough and an irresistible filling. Such finesse is only possible if the Raviole is made using a French Raviolatrice, an ancestral machine, allowing the assembly of the dough and the stuffing. This finesse of the dough ensures in the mouth a melting dough which blends perfectly with the stuffing and which marks the artisanal production of our Ravioles. The company's know-how was developed in 1885 by Marie-Louise Maury who made her Ravioles in a café located in Romans-sur-Isère. Daughter and granddaughter of Ravioleuses, Mère Maury has made a name for herself, thanks to her ancestral recipe for Ravioles, made up of a fine dough of soft wheat flour, fresh eggs, water and butter, with a Comté AOP filling. , fresh cow's cheese and parsley browned in butter.
