Gourmandise (Liqueur wine / Cartagena) Assembly 100% Alicante-Bouschet Terroir Rolled pebbles Old vine established in goblet and planted in 1939 Yields 28 hl/ha Winemaking Alicante Bouschet grape must (vine planted in 1939) mutated with Languedoc brandy aged in oak barrels. In order for the components to blend, the liquor is mixed manually every day for 3 weeks and then intoned into old oak barrels. The breeding is done in Soléra, started in 1990! this is why this liqueur wine is not vintage. You will therefore find a constant quality over time. The word of the oenologist The color is dark and ruby, adorned with red copper reflections. Very nice complexity on the nose which exudes aromas of red fruits (blackcurrant and cherry) with touches of prune in alcohol and rose petals. The palate, in aromatic harmony with the nose, is charming with its fine balance and delicate sweetness. The alcohol is well melted and contributes to the length in the mouth. Accompaniments This liqueur wine can be drunk chilled as an aperitif or as an accompaniment to dessert such as chocolate fondant, baked figs drizzled with cartagena, tarte tatin, chocolate profiteroles, black forest, fruit bavarois crepes, surprise crepes, chocolate mousse, cherry clafoutis, peach melba, Belle Hélene pear, 3-chocolate parfait... you too can try sweet and savory pairings with foie gras with figs, cheese with blue cheese and many other pairings according to your imagination and your culinary talents! Otherwise “fuman la bofarda e chiman la cartagena” like F. Mistral.
