Grenache nugget - 2020 (AOP Saint-Chinian)

Long macerations (about 5 weeks) punctuated by an extraction work by shedding (daily) exclusively. The entire aging (post-vinification) is done for 12 months in French oak barrels of 225 liters having already seen a white vintage (Grenache blanc and Roussanne). This makes it possible to transmit to our Nugget some aromas and molecules specific to the white wines (flavonoids); but also to generate a micro-oxygenation of the structure without however transmitting the tannins and aromas of the barrel which from our point of view, can easily mask the qualities of certain grape varieties if they are not controlled. A little wood but not too much, just to soften the structure and oxygenate the tannins! Alcohol content: 14%
