THE STONE MILL

Our family has been rooted in viticulture for over 500 years. In 1737 our ancestors took over the stone mill and developed the former medieval noble mill into an ambitious quality winery. Today we are all the more thinking about our strengths: authenticity, craftsmanship, origin and sustainability.
We combine ecological management with elements of regenerative agriculture and biodynamics.

After the conversion to organic viticulture in 2017 and the certification as an "organic winery" completed in 2019, we have also been using regenerative and biodynamic elements since 2021. An important point is that
continuous build-up of humus in our vineyard soils. Not only does this protect this important asset from siltation and erosion, but humus also stores immense amounts of CO2 and is the largest terrestrial store of organic carbon. To achieve this humus build-up, but also to reduce various pesticides, spray
we since 2021 u. a. various so-called "teas" and biodynamic preparations, at certain times of the year, both on the vineyard soil and on the plants. These are, for example, Brenneselmanure and
Horsetail extract, which strengthens plants and has a hardening effect on plant tissue. We also use our own compost tea. A liquid extract from compost - which contains about 500 times more microorganisms than the compost itself. Applied to the soil, this acts as a catalyst for
life-sustaining, strengthening processes in the soil, promotes and activates soil life, which supports better humus formation and plant health. All these measures give our vines what they need and naturally reduce the yield! The ecological balance is promoted and the ecosystem of our vineyards is stabilized. This influences the ripeness and health of the grapes and thus the quality and taste of our wines. We give our vines plenty of time during the 180-200 day growing season to mature
to concentrate natural forces in the grapes.
