A premium and incomparable umeshu, the fruit of the meticulous work of one of the very few liqueur producers who cultivates his own plums. The nose is particularly complex: the aromas of yellow fruits evolve towards vanilla and white flowers. On the palate, it begins with a lovely sweetness, followed by a very pleasant sensation brought by great control of acidity and alcohol. It ends with notes of saffron, with a superb bitterness that lengthens the mouth. Arimoto Farm is a small family business that has been growing plums for generations in Wakayama, a region known throughout Japan for its superior plum quality. This is one of the five producers in the country to produce its own umeshu from its own fruit. This considerable advantage allows him to select the plums by feeling them one by one in order to keep only those whose maturity is judged to be correct! This meticulous selection work is repeated three times: during harvest, after arrival in the warehouse, and finally after a 4-day maturation. In the end, only the most perfect fruits are used to make this nectar, which is bottled after two to three years of aging. This precious umeshu is produced in very limited quantities: between 1,500 and 4,000 bottles are sold each year.
