
Beautiful light apricot color. The umeshu is translucent with a pretty nose with notes of almond, candied plum but also quince paste. It’s discreet with a tangy side. At the opening, the umeshu is still on the same notes with a hint of orgeat. The palate has a sweet attack with moderate acidity. We find the notes that we had on the nose: orgeat, almond, dried apricot. The palate is light and delicate. We perceive a little umami. Little by little, the apricot core emerges as well as a jammy side. We end the tasting with flexibility. It’s a beautiful, easy-to-eat umeshu. HASenjoy in a wine glass, chilled.
