§47 - the story behind our name. The production of non-alcoholic wine is regulated by law in Germany. § 47 of the Wine Ordinance explicitly regulates the provisions for alcohol-free wine. According to this, non-alcoholic wines must be obtained by removing alcohol. First, the wine is pressed from grapes in the classic way, only then is the alcohol removed from the wines by vacuum evaporation at around 30 degrees. This process does not overcook the wines, so that the bouquet and aroma are retained by the gentle thermal treatment.
