Fregula, available in various sizes, was produced by "rolling" the semolina mixture into a large earthenware basin and toasted in the oven. It comes in the form of irregular balls with a diameter varying between 2 and 6 millimetres. The perfect cooking is creaming with fish sauces or other full-bodied sauces. In Sardinia one of the typical dishes is Fregula Grossa Tostata with clams and clams. In this variant, with cuttlefish ink, it makes it very elegant in presentation: ideal with cuttlefish and peas!
