GRAPE VARIETY: Chenin VINIFICATION: Traditional method. Pressing on the property, entry of grape juice into our cellars. Alcoholic fermentation carried out at low temperature. Aged on fine lees for approximately 3 months. Assembly and filtration before drawing. Second fermentation in the bottle: addition of liqueur, drawing, taking foam, slats, 36 months minimum, tuffeau cellars. Disgorging and stirring of ice. TASTING: Beautiful golden color, fine and airy foam. Elegant nose of dried fruits such as hazelnut, almond, etc. Fruity and complex wine whose freshness and length in the mouth will satisfy lovers of great wines. Serve between 6 and 8°C.
