GRAPE VARIETY: Chenin VINIFICATION: Traditional method. Pressing on the property, entry of grape juice into our cellars. Alcoholic fermentation carried out at low temperature by thermoregulation. Aged on fine lees for approximately 3 months. Assembly and filtration before drawing. Second fermentation in the bottle: addition of the tirage liqueur and fermentation on slats for at least 24 months in our tuffeau cellars. Riddling and disgorging with ice. The entire process took more than 36 months. TASTING: Beautiful, clean, bright, deep gold color. Elegant nose with a dominant fruity note: citrus and quince. Good hold in the mouth, where body and finesse combine happily. Serve between 6 and 8°C. TASTING: Beautiful, clean, bright, deep gold color.
