Our soup is composed of: Etruscan black lentils, pearl barley and split and hulled green peas. ANDan excellent food rich in proteins, starch and mineral salts. Furthermore, it is also a rich source of crude fiber and iron. ♦Preparation procedure ♦ in a pan, sauté the onion (or shallot), carrots and celery. Add some tomato puree and basil. Next, pour the Soup mixture into the pot and cover with just enough hot water to cover the mix. Boil everything over a moderate heat for the indicated time. Finally, pour the soup onto a plate and add some extra virgin olive oil. Soaking no / Cooking 30-40 minutes [pressure cooker 15' from the start of the whistle]. All our legumes are grown in open fields by local farmers.
