They are perfect for smoothies, salads, pestos or as a decoration. Kale sprouts provide more iron and calcium compared to meat and are therefore also referred to as "vegetarian meat". The sprouts contain 30-35% protein, lots of mustard oils and an abundance of vitamins A, C and K. Kale sprouts have many more valuable ingredients than kale vegetables. They could strengthen the immune and cardiovascular systems and have a cholesterol-lowering effect. Kale is a dark germ, it is best to darken it until it germinates.
