The taste is slightly "pea" and mild. The very delicate tasting sprouts are eaten raw or cooked in salads, vegetable dishes, quark or as a topping on bread. Many rich nutrients are found in the small seeds. Crimson clover sprouts are rich in protein. They contain vitamin A, groups B, C, E and the minerals potassium, calcium, magnesium and phosphorus as well as the green leaf chlorophyll. The sprouts could have an antispasmodic and blood cleansing effect and promote relaxation of the nervous system. They are gluten free. Both the seed and the shoot should always be kept moist, but not wet. Crimson clover grows very well in a sprout jar. Place bright, but not in direct sun.
