CHIPOTLE PEPPER

Chipotle pepper (chili flakes) is a jalapeño pepper that is dried and then smoked using a method that dates back to the time of the Aztecs. The Jalapeño pepper, from the Solanaceae family, is a pepper native to the province of Vera Cruz in Mexico; green or red in color depending on its degree of ripeness. To turn it into Chipotle, it is dried at 74°C on shelves in closed rooms for several days, using a hot smoking technique. Chipotle ranks between 5,000 and 10,000 on the Scoville scale, making it a moderately hot pepper. The Scoville scale, created at the beginning of the 20th century, aims to measure the intensity of spiciness of peppers by evaluating in particular the level of capsaicin, responsible for the sensation of heat/spiciness. A great classic of Mexican cuisine, it is present in many sauces. It can also be used with grilled meats, red beans, guacamole or a chocolate dessert!
