Cayenne pepper

Originating from the Andes and discovered in Guyana, cayenne pepper is a very hot pepper (close to bird's eye chili) to be used with caution to spice up sauces and stews. It is sometimes called "mad pepper...." quite a program.... Cayenne pepper is a category that includes several peppers native to South America. It can reach 30,000 on the Scoville scale (scorching hot). This scale, created at the beginning of the 20th century, aims to measure the intensity of spiciness of peppers, in particular by evaluating the level of capsaicin, responsible for the sensation of heat. Cayenne pepper is on a similar level to bird's eye chili, so it is a hot pepper and should be used with caution. Used sparingly, this chili pepper is ideal for spicing up all kinds of dishes: pies, quiches, sautéed vegetables, dishes in sauce...
