The wholemeal semolina gives the Struncatura a strong flavor and an intense aroma, which will make every first course special. Its rough and full-bodied consistency, however, makes it perfect for holding any type of seasoning. Uses in the kitchen Struncatura is a pasta shape that lends itself to countless recipes. Typical is the recipe for "ammuddicata" pasta, a poor dish of Calabrian peasant cuisine based on EVO oil, garlic, spicy chili pepper, anchovies and breadcrumbs previously sautéed in a pan and made crunchy. Today this recipe is much appreciated and also replicated by chefs. Struncatura is perfect to savor with rustic sauces and pestos, with spicy and vegetable-based condiments. Also perfect with garlic, oil and chilli pepper! Tips for perfect cooking - Use 6 liters of water per 500 g - Add salt and when the water boils, pour in the pasta. - Stir occasionally. - Once cooked, drain and season to taste. - Cooking time: 10-12 min.
