Fileja di Tropea, 500g

Fileja di Tropea is one of the most well-known traditional pasta shapes in Calabria, produced in the province of Vibo, and especially in Tropea, hence the name "Fileja di Tropea". Similar to macaroni with an elongated and rolled shape, the processing of Fileja is very characteristic: the pasta is cut into strands of approximately 10 cm and then rolled on a thin wire, with a skilful and quick movement of the hands. In the past, however, a stick obtained from the woody part of the SPARTO stems, a typical Mediterranean plant, was used. All Valle del Crati durum wheat semolina pasta is handcrafted using only selected Italian grains; it is bronze drawn and dried at low temperatures, so as to maintain a high content of proteins and nutrients. Uses in the kitchen Fileja combines perfectly with full-bodied and tasty sauces, typical of Calabrian cuisine. It is accompanied with tomato sauce and possibly with the typical grated Pecorino Crotonese cheese and a good spicy Calabrian chili pepper. An excellent choice is also to flavor it with a generous dose of 'Nduja from Spilinga, for a strong and lively traditional first course. Fileja is also ideal for creamy white sauces based on vegetables, such as courgettes and aubergines. Tips for perfect cooking Use 6 liters of water per 500 g Add salt and when the water boils, pour in the pasta. Stir occasionally. Once cooked, drain and season to taste. Cooking time: 10-12 min.
