Fusilli are one of the best-known typical Calabrian pasta formats, closely linked to the peasant tradition. Their characteristic shape is given by the particular workmanship around an iron: the dough loaves are placed and shaped around this iron on a floured wooden pastry board. An ancient gesture, which brings back memories of typical Sundays spent with the family. Valle del Crati durum wheat semolina pasta is handcrafted using only selected Italian grains; it is bronze drawn and dried at low temperatures, so as to maintain a high content of proteins and nutrients. Uses in the kitchen Fusilli are traditionally accompanied by full-bodied sauces based on tomato and meat, but their consistency and porosity also make them perfect for sauces based on vegetables, mushrooms and plain fish ragù.
