Cabernet Sauvignon Merlot Reserve 2018 – Organic

REMOVAL AND STORAGE The grapes come from the best vineyards in Tattendorf. Only a few grapes remain per vine in order to obtain optimal physiological ripeness. Only when the skin, the seeds and the stalks are perfectly ripe are the grapes carefully harvested by hand. The grapes are then processed very gently and the mash is then fermented in open tanks and the mash cake is submerged 3 times a day. Of course, the maceration time is also much longer here and depends on the year and the maturity. Only the best batches of reserve quality are divided into 50% new oak barrels and 50% second filling barrels and then mature for 18 months. Only after this long maturation phase are all barrels tasted and only the best are blended for the reserve. Cuvee from: – 70% Cabernet Sauvignon – 30% Merlot WINE DESCRIPTION The internationally best-known varieties combined in the classic cuvée, slowly fermented and matured in mainly new barriques bring wines with power, complexity, tannin and fine spice. In addition to the typical taste, the terroir and the clear signature offer of the winery a unique charm.
