REMOVAL AND STORAGE The grapes come from the best vineyards in Tattendorf. Only a few grapes remain per vine in order to obtain optimal physiological ripeness. Only when the skin, the seeds and the stalks are perfectly ripe are the grapes carefully harvested by hand. The grapes are then processed very gently and the mash is then fermented in open tanks and the mash cake is submerged 3 times a day. Of course, the maceration time is also much longer here and depends on the year and the maturity. Only the best batches of reserve quality are divided into 50% new oak barrels and 50% second filling barrels and then mature for 18 months. Only after this long maturation phase are all barrels tasted and only the best are blended for the reserve. WINE DESCRIPTION The variety, which is quite demanding in terms of weather and location, produces a balanced, complex, garnet red wine with complexity and impressive aging potential. Especially when Reserve, in which the best locations for the year are selected depending on the weather. The peculiarities of the vintages are particularly good for this variety, especially after a few years of ripening to recognize.
