These canned cardoons are prepared from non-spiny varieties with naturally white and fleshy (not hollow) ribs. However, the transformation can only take place after a period of etiolation necessary to blanch the vegetable. It is the ribs (petioles) that are used and they are tapered by hand before cutting them into square pieces of 3 or 4 cm on each side. Use: from the artichoke family and therefore tasty and tender, cardoon can be eaten sautéed in a pan or prepared as a gratin. Nut. values/100g: Val.
