The Chicken Jerk Rub is a mixture of herbaceous, woody and slightly sweet spices, with a touch of cayenne pepper to rub on poultry, before cooking on the barbecue, on the plancha, in the oven or in the pan. Use it as a dry marinade, or mix it with oil, mustard, or ketchup sauce. You have to rub the meat with the mixture as for a massage, so that the spices penetrate and give a real taste to the meat. Ideally, leave to marinate for 3 hours to overnight in the fridge. Rub is an English term which means “to rub”. Indispensable to any BBQ recipe that should be, the “spices to rub”, “Dry Rub“, or simply “dry marinade”, bring a lot when preparing meat.
