Rub comes from the English “to rub” which means to rub. Also called “rubbing spice” or “rubbing salt”, it is most often used in dry marinades. The principle is to apply the Rub directly to the food without mixing it with oil or any other liquid. It is a must-have for an American-style grill. Its primary function is to flavor meats without altering them. Its use can extend to fish or vegetables/starches. There is not a place in Jamaica where you will not find Chicken Jerk for the simple reason that Jerk is to Jamaica what cheese is to France. Traditionally, the chicken is marinated for several hours with - among other things - the essential Scotch Bonnet pepper which is unfortunately sometimes replaced by cayenne pepper to limit costs. Yet beyond its strength, it has an extraordinary flavor. It is this, along with the seeds and leaves of Jamaican pepper, which will give Chicken Jerk its authentic taste. To offer you an unforgettable trip to the land of Bob Marley, we have created our Jamaican Jerk based on the authentic recipe of traditional Chicken Jerk.
