Jamaican Jerk

The Rub comes from the English "to rub" which means to rub. Also called “rubbing spices” or “rubbing salt”, it is most often used in a dry marinade. The principle is to apply the Rub directly to the food without mixing it with oil or any other liquid. It is essential for an American grill. Its primary function is to flavor meats without distorting them. Its use can extend to fish or vegetables / starches. There isn't a place in Jamaica where you won't find Chicken Jerks for the simple reason that jerk is to Jamaica what cheese is to France. Traditionally, the chicken is marinated for several hours with - among other things - the essential Scotch Bonnet pepper which is unfortunately sometimes replaced by a cayenne pepper to limit costs. Yet beyond its strength, it has an extraordinary flavor. It is this, along with the seeds and leaves of india wood (allspice), which will give Chicken Jerk its authentic taste.
