Also called “rubbing spice” or “rubbing salt”, it is most often used in dry marinades. The principle is to apply the Rub directly to the food without mixing it with oil or any other liquid. It is a must-have for an American-style grill. Its primary function is to flavor meats without altering them. Its use can extend to fish or vegetables/starches. Barbecue is the great Texan specialty. The meat is slowly smoked and the whole secret of its success lies in the Rub that is used. HAS In the Wild West era, cowboys used coffee and salt as a rub to flavor their meats in the desert. We have imagined a Rub that combines this great era and the modern; while taking into account the strong Mexican influence. Our Texas Rub is made from a very good Central American coffee. It is associated with two peppers: the Pequin pepper (hot but used sparingly) which is locally known and found quite easily in the wild in Texas and northern Mexico. As well as chipotle which is a fairly mild Mexican pepper, traditionally smoked with pecan wood. Coffee may seem surprising, but it is very often used in the land of Rub.
