Our palm blossom sugar benefits from an IGP and comes from from the Kampong Speu area. Harvesting palm juice is a ancestral Cambodian tradition. The farmers use natural care and collection techniques and traditional. It is obtained from the juice of palm flowers. The sap harvesting is carried out in a sustainable way and only the stem of the flower is incised. Unrefined, the sugar obtained is brown (young, the sugar is clear and over time it darkens with more marked spicy notes) and naturally rich in sucrose and trace elements. This can be seen very well on the photographs on the left, the sugar in the plate being young and the one in the 250g bag being "old". We only have young sugar in stock at the moment, but you can let it age at home in its kraft bag or in an airtight box.
