"The Poet" Organic Agriculture

"  Il Poeta" is an organic extra virgin olive oil produced in the area on the slopes of Etna, the Alcantara valley and the Simeto valley in Sicily.   The olive harvest takes place manually or with the aid of facilitating machines and is carried out when the olives are in a state of veraison.   The milling takes place within 12 hours of harvesting, using an extraction system with technologically advanced systems.   The oil extraction takes place rigorously at cold temperatures to preserve the organoleptic properties of the oil.
