Our carpaccio is made from pork loin. It's a very lean, excellent part. Pork carpaccio is made from pork loin, salted and seasoned with pepper, sage spices and natural flavors, left in brine for about 7 days, then smoked over olive wood and left to dry for another 15 days. The pork carpaccio is gluten-free and is available in pieces of approximately 1.725 kg with a shelf life of 6 months.
