A spun cheese made from fresh Gargano sheep's milk, matured for 6 months on wooden boards. Its rind is worked according to a traditional method: rubbed with extra virgin olive oil and a little wine vinegar. The cheese is pampered and turned several times until its maturity is satisfactory. Its chew is firm and its taste delicate: an exceptional pecorino. The pecorino semi stagionato is offered to you in whole pieces of about 1.5 kg vacuum-packed.
