Vanilla Pompona XXL from Peru

Also called Vanillon, this variety is native to Mexico but has been found in Venezuela, Colombia, Peru, Ecuador, Bolivia, French Guiana, and Madagascar. Our Vanilla Pompona XXL comes from Peru where it is grown under the rainforest canopy. It differs from planifolia by its larger shape, its coumarin content and its lower vanillin rate (characteristic of Pompona). The latter has earned him to be underestimated and considered of lesser quality. However, the vanillin level is not the only parameter to take into account to establish the quality of a bean. Indeed, the humidity level, its aromatic palette, its caviar and its size are all elements that define it. It is also very coveted for its rarity and its powerful notes of liquorice and coumarin associated with its anisic* alcohol content which is highly sought after by perfumers and starred chefs. Classified by the IUCN (International Union for the Conservation of Nature) as "in danger of extinction", it is now a protected species. It is little produced compared to the taxon planifolia because it is more difficult to cultivate. Also, only a small part of the production is marketed because the pods split quickly (attainment of full maturity).
