Original Planifolia vanilla from Mexico

Mexican vanilla is the Original vanilla. It is naturally pollinated by a bee specialized in foraging orchids which is present only in certain American countries, in particular in the tropical forests of Mexico. Its species is no longer clearly identified. For a long time, entomologists considered the Melipone bee to be the pollinator, but this theory seems to be discarded today. Recent studies seem to attribute it to the bee Euglossa viridissima, but research continues. The Mayas produced a vanilla of another variety: the Cribbiana. It is unfortunately critically endangered today. As for the Aztecs, they produced little or none. It was the Totonacs, mainly from the state of Veracruz, who produced it. They had the monopoly of production for more than two centuries and remained the world's leading producers until the middle of the 19th century. Then the discovery of manual fertilization (carried out by man) propelled the cultivation of vanilla and relayed Mexican production to the background. This discovery was beneficial for the economy of many small islands. Our palates won't complain either because these multiple varieties and the development of this know-how offer us singular vanillas, each more exceptional than the next; but Mexican vanilla deserves to be (re)discovered and once again appreciated at its fair value. The ancestral know-how of the Totonacs offers us pods that are scarified one by one and not scalded, which allows the pod to improve with age, unlike steamed pods which must be consumed more quickly.
