The Cav. Giuseppe Cocco Artisanal Pasta Factory is in Fara San Martino, a village located on the slopes of the Maiella mountains in Abruzzo and better known as the "Pasta Capital".

The pasta factory has its roots in a longstanding family tradition in the pasta production and still today uses exclusively ancient machinery for production.

The Cav. Giuseppe Cocco taught his children and grandchildren that in order to make an outstanding pasta you need four ingredients: extraordinary quality wheat, water from the springs of the Verde River, the air of Fara San Martino and the Ancient Processing, the one made with the original and precious machinery of the past.

Even today, in the Cav. Giuseppe Cocco Artisanal Pasta Factory, pasta is produced in small quantities, slowly kneading the coarse-grained semolina with cold spring water in the ancient mixers, using only rough bronze dies. Thanks to the static drying at low temperature for a long time, all the nutritional qualities remain intact, together with the genuine taste of the old times.

The pasta factory produces more than 100 pasta shapes of different types and ingredients: in addition to semolina pasta and egg pasta, it produces durum wheat semolina pasta with bran and middlings, stone-milled organic whole wheat pasta from Senatore Cappelli heritage wheat and spelt, saffron pasta and organic semolina pasta.
The pasta is distributed throughout Italy mainly in gourmet shops and restaurants and in over 20 countries around the world and is prized for its flavour, toughness and excellent cooking properties.
