
An artisanal umeshu based on rice shochu, very fine and delicate, similar to a sweet white wine. The aromas of ripe yellow fruits are intense, mixed with pastry notes of vanilla and wood that bring complexity to the nose. The palate is very pretty: it begins with a controlled sweetness moving towards an aromatic mid-palate carried by a superb acidity, with a nice balance between sweetness and alcohol. We find yellow fruits here accompanied by touches of dried fruits. Sujimoto Noen is a small plum farmer from Wakayama, a region known throughout Japan for growing this fruit. It is also one of the few plum producers to produce its own umeshu plum liqueur. Mr. Sujimoto carefully selects his fruits, which he macerates for several months in rice shochu, before leaving to rest for several years in vats. The whole thing is finally clarified using a secret method before bottling, for a result of unparalleled finesse and refinement.
