History
The history of Calvados Morin began in 1889 in La Haye de Calleville in the Risle Valley, before Pierre MORIN succeeded his father and transferred the small family business to Brionne and then permanently to Ivry-la-Bataille, a charming little Norman town in the Eure Valley. It was in the former installations of the Distillerie de Thélème, a famous liqueur of the time, that Calvados Morin took up residence on February 2, 1945. ­
This establishment benefits from unique aging facilities in Normandy, including extensive underground cellars where several hundred small oak barrels are stored, in which the precious Eau-de-Vie rests.

More than a century of experience
Since 1889, our family business has specialized in blending and producing "premium" Calvados, made from "heartland spirits" that alone possess the qualities required to make fine, quality Calvados. Selected and chosen from the best vintages of Normandy, it is under the guidance of our Cellar Master that Calvados Morin are lovingly and rigorously produced.

The art lies in combining different eaux-de-vie in clever blends to magnify and exalt the Normandy terroirs, and carefully choosing those intended for aging. Thus, checking the maturation every day to preserve the bouquet and fragrance, this work of patience will find its reward in the fullness of a sumptuously amber Hors d'Age.


Aging
Calvados Morin is renowned for the quality of its blends and the careful monitoring of its quality. The Morin taste is, in reality, the fruit of a judicious marriage between different terroirs and appellations.

The young eaux-de-vie chosen for aging will initially be aged in 300 to 400 liter barrels in cellars subject to climatic variations, which accentuates oxidation and therefore aging. This results in significant evaporation (angels' share), an essential step for the proper aging of an eau-de-vie.

Calvados, housed in this noble and strong wood that is the Limousin oak, will gradually develop, in a mysterious alchemy, subtle aromas and its beautiful amber color. ­
Through the wood, the Calvados will breathe for years, slowly losing its fire and gradually digesting the tannins of the wood, gradually gaining bouquet and aromas. ­
A unique environment
The unique environment of our troglodyte cellars plays a significant role in the development of our Calvados. Dug into the chalky hills of the Eure valley, the long galleries cut deep into the cliff. The very humid atmosphere of the place is ideal for aging Calvados grown in silence and sheltered from city vibrations. This “refining” is a very important second step in our aging process. The ambient humidity, close to 100%, allows a natural drop in the degree, which ultimately results in more supple and harmonious eaux-de-vie.
