For their AMARO 212, distiller Thomas Neubert and mixologist Oliver Ebert (Becketts Kopf, Berlin) have chosen the recipe of an “Aperitivo Bitter” in the Turin style. In addition to gentian root, wormwood and cinchona bark are responsible for the bitter aromas of this herbal liqueur, which are rounded off with clove and cinnamon on the finish. The AMARO 212 gets its freshness from macerated bitter orange peel and peach juice. The result is a complex bitter that is just as convincing as a natural ingredient for the Negroni cocktail as it is on its own, with sparkling wine or on ice.
